Kickstarting a community

Husband and wife team, Rick and Amy, decided that this year would be the year they follow their lifelong dreams of running and owning a restaurant. Luckily for the residents of Macclesfield, its slap bang in the heart of the town.

Amy & Rick raised initial funds through a Kickstarter campaign online. Locals and food lovers from all over helped them to raise the capital to make sure they had the best start possible. As a direct result of this campaign, they have been able to create new jobs for the local community, give a Grade II* listed building the future it deserves, adds a landmark restaurant and cocktail bar to the emerging food district of Macclesfield, and support other local suppliers including farmers & breweries on the way.

The restaurant itself sits proudly on Chestergate. Macclesfield’s emerging food district. Inside of the former home of Charles Roe, you’ll be immediately hit with history. This building is breathtaking and has the potential to go even further with your support. A majestic staircase leads you from the downstairs cocktail bar up to the first-floor restaurant.

The restaurant has 24 covers and will provide you with a beautifully romantic and intimate dining experience. Rick has over 10 years of experience working in hospitality and absolutely loves food. Eating, cooking, or talking about it will get him excited! This love is absolutely evident in the menu he has created.

4 Starters. 5 Mains. 4 Desserts - Wine pairing optional… as if you’d say no? The couple has purposely designed a classic and simple yet elevated menu. This is fine dining without a sniff of pretension. Anyone and everyone is welcome here and is encouraged to step outside of what might be their comfort zone to give them a try. We would advise booking though because we know once the word spreads, it’s going to be tough to get in.

“Would you like to start with the breadboard?” Ummm, Yes, please! All of your bread dreams come true. The warm pieces of bread are served with olive oil, balsamic vinegar, and butter. We took the additional upgrade for the Burrata and it was sensational.

Now our tastebuds were ready we ordered starters - Arancini for Jamie. Crispy fried risotto balls with melting mozzarella middles. The accompanying spicy tomato dip brings a nice kick to the dish too. A happy change from the regular arancini we’ve tried. Don’t get me wrong, we love a ball of carbs, but the melting middles got us really excited.

The excitement continued over on my plate with the Scallop Starter. My god. The softest scallops I’ve ever eaten - and I’ve had more than my fair share of them - Pan-fried with Iberico ham, red onion pickle, and Piri Piri mayo. The salt from the ham with the sharp pickle makes the most delicate explosion on your tastebuds. Again, a combination we’ve never seen.

The excitement only ramped up when we moved onto the main courses - Jamie decided he would take the plunge and order one of the vegetarian dishes. There are only 5 mains on this menu. Two of which are vegetarian. Chef Rick wholeheartedly (and rightly so) believes that Vegetarian and Vegan dishes should not be an afterthought. Rather, they are integral to creating a well-rounded menu that everyone can enjoy.

The Cavolo Nero Gnocchi was every bit as good as it sounds. A generous size portion of soft pasta dumplings in Italian kale pesto with parmesan and virgin olive oil. It’s clear that having a smaller menu pays off. This dish was perfectly balanced, held a great depth of flavour, and for a carnivore to say he would come back and have that dish again means it hit all the right spots.

I can’t lie here and say I wanted to try the Veggie option… I’d been eyeing their Steak for 3 days before I even arrived. 7 ounces of the softest and juiciest steak. My mouth is literally watering as I’m typing this right now. Cheshire beef, with parmesan & truffle fries with a punch-you-in-the-chops-chimichurri. I’m telling you, not enough people have Chimichurri on their menu with steak, and it’s such a shame. Like a scene from Jaws, I devoured the whole thing with my eyes rolling back into my head. Cannot tell you enough, just how good this dish is!

Not only is Rick a masterclass chef, but wife Amy is a soon-to-be qualified sommelier and has painstakingly paired the wine on the menu with each dish. There are two choices for you with each dish. Perfect for someone as indecisive as me. Made the whole evening so much calmer knowing the wine I ordered was going to enhance the food I was eating.

The wine didn’t quite stop with the main courses - they also have a wine pairing with dessert. Sweet tooth diners, it’s a total dream. We had the sticky toffee pudding and the Panna cotta.

Again, I have to mention, this Sticky toffee pudding is both vegan and gluten-free. Would I of known unless I was told? Absolutely not. One of the best sticky toffee puddings we’ve ever eaten - it just so happens to be Jamie’s favourite, so he’s had a few! You can really see the thought that has gone into EVERY dish.

I had the Panna Cotta - Buttermilk Panna Cotta with doughnuts, raspberry, and forest gin jelly and mascarpone creme. It was a happy ending to a beautiful meal. A real showcase of talent. So many different textures and tastes, I didn’t want it to end…

Sadly all good things do come to an end but thankfully not for long as The Copper Room is actually open for Lunch service too. In their downstairs cocktail bar, you can enjoy the finest lunch snacks in a relaxed and welcoming atmosphere. They serve a medley of dishes - Sandwiches, Arancini makes another appearance, Bruschetta, Calamari… Not sure I could ever get bored of this place which is why I’m waffling on!
